I LOVE Thai food and Green Papaya Salad is one of my favorites! With a few swaps, this salad drops to more than half the carbs! šŸ˜‰ā£ ā£

INGREDIENTS:ā£ ā€¢ 1/3 cup of fresh lime juiceā£ ā€¢ 1-2 tablespoons @Splenda or zero sweeteners of your choiceā£ ā€¢ 2 tablespoons plus 2 teaspoons fish sauceā£ ā€¢ 2 tablespoons dried shrimp, finely choppedā£ ā€¢ 4 garlic cloves, mincedā£ ā€¢ 20 fresh green beans cut into 1-inch pieces ā£ ā€¢ 1 and 1/4- cup thinly cut jicamaā£ ā€¢ 10 large cherry tomatoes, halvedā£ ā€¢ 1/2 cup chopped fresh cilantroā£ ā€¢ 2 green onions, very thinly slicedā£ ā€¢ 1 tsp of red pepper flakesā£ ā€¢ 2 tablespoons coarsely chopped salted peanutsā£ ā€¢ 2 cups shredded napa cabbageā£ ** Try it served with grilled shrimp or another protein ā£ ā£ PREPARATION:ā£ 1. Whisk first 5 ingredients in a large bowl. Set dressing aside.ā£ ā£2. Cook beans in medium saucepan of boiling salted water until crisp-tender, about 5 minutes. Drain and add to the bowl. ā£ 3. Add lettuce, jicama, tomatoes, cilantro, green onions, red pepper flakes, and toss well. let sit for a few minutes and toss every so often to allow dressing to absorb top to bottom. ā£ 4. When ready to serve, sprinkle peanuts over and ENJOY!šŸ˜‹ā£
