I LOVE Thai food and Green Papaya Salad is one of my favorites! With a few swaps, this salad drops to more than half the carbs! šŸ˜‰ā£ ⁣

INGREDIENTS:⁣ • 1/3 cup of fresh lime juice⁣ • 1-2 tablespoons @Splenda or zero sweeteners of your choice⁣ • 2 tablespoons plus 2 teaspoons fish sauce⁣ • 2 tablespoons dried shrimp, finely chopped⁣ • 4 garlic cloves, minced⁣ • 20 fresh green beans cut into 1-inch pieces ⁣ • 1 and 1/4- cup thinly cut jicama⁣ • 10 large cherry tomatoes, halved⁣ • 1/2 cup chopped fresh cilantro⁣ • 2 green onions, very thinly sliced⁣ • 1 tsp of red pepper flakes⁣ • 2 tablespoons coarsely chopped salted peanuts⁣ • 2 cups shredded napa cabbage⁣ ** Try it served with grilled shrimp or another protein ⁣ ⁣ PREPARATION:⁣ 1. Whisk first 5 ingredients in a large bowl. Set dressing aside.⁣ ⁣2. Cook beans in medium saucepan of boiling salted water until crisp-tender, about 5 minutes. Drain and add to the bowl. ⁣ 3. Add lettuce, jicama, tomatoes, cilantro, green onions, red pepper flakes, and toss well. let sit for a few minutes and toss every so often to allow dressing to absorb top to bottom. ⁣ 4. When ready to serve, sprinkle peanuts over and ENJOY!šŸ˜‹ā£
