šMy 3-year-old daughter requested meatballs so that's what's for dinner! š ā£ā *This is a meal you will want to make sure you planned out ahead of time so you don't go over your daily carbs. ā£ā ā£
ā Ingredients:ā£ā 2.5 to 3 pounds ground beefā£ā 1/4 cup grated parmesan cheeseā£ā 3 tbsp ground flax mealā£ā 2 eggsā£ā 1/2 onion, roughly choppedā£ā 4 garlic clovesā£ā 1 tbsp Worchestshire sauceā£ā 1 tsp salt ā£ā 1/4 tsp pepperā£ā oil or coconut oil for browning meatballsā£ā 16-20 oz. of your favorite tomato sauce. ā£ā **(Be sure to check carb counts, I used Prego No Sugar Added Traditional Italian Sauce, 7 net carbs per 1/2 cup)ā£ā ā£ā Instructions:ā£ā 1. Place all of the ingredients EXCEPT the ground meat in a blender or food processor and blend until it resembles a puree, about 30 seconds.ā£ā ā£ā 2. Place meat in a mixing bowl and pour blended mixture over it.ā£ā ā£ā 3. Using your hands' mix together until well blended.ā£ā ā£ā 4. Form mixture into meat balls and set aside. ā£ā ā£ā 5. In a large pot heat a few tablespoons of oil and brown meatballs in small batches. They are delicate so make sure to leave room for turning.ā£ā ā£ā 6. Add all meatballs back to the pot, pour sauce over and simmer for 8-10 minutes.
