🍝My 3-year-old daughter requested meatballs so that's what's for dinner! 😊 ⠀ *This is a meal you will want to make sure you planned out ahead of time so you don't go over your daily carbs. ⠀
⠀ Ingredients:⠀ 2.5 to 3 pounds ground beef⠀ 1/4 cup grated parmesan cheese⠀ 3 tbsp ground flax meal⠀ 2 eggs⠀ 1/2 onion, roughly chopped⠀ 4 garlic cloves⠀ 1 tbsp Worchestshire sauce⠀ 1 tsp salt ⠀ 1/4 tsp pepper⠀ oil or coconut oil for browning meatballs⠀ 16-20 oz. of your favorite tomato sauce. ⠀ **(Be sure to check carb counts, I used Prego No Sugar Added Traditional Italian Sauce, 7 net carbs per 1/2 cup)⠀ ⠀ Instructions:⠀ 1. Place all of the ingredients EXCEPT the ground meat in a blender or food processor and blend until it resembles a puree, about 30 seconds.⠀ ⠀ 2. Place meat in a mixing bowl and pour blended mixture over it.⠀ ⠀ 3. Using your hands' mix together until well blended.⠀ ⠀ 4. Form mixture into meat balls and set aside. ⠀ ⠀ 5. In a large pot heat a few tablespoons of oil and brown meatballs in small batches. They are delicate so make sure to leave room for turning.⠀ ⠀ 6. Add all meatballs back to the pot, pour sauce over and simmer for 8-10 minutes.
