SHRIMP AVOCADO SALAD with Garlic Lemon Vinaigrette


1 pound raw shrimp, medium peeled and de-veined 1 large avocado, diced 1 medium tomato, de-seeded and diced 1/4 cup red onion, minced Freshly chopped cilantro 4 tablespoons olive oil 1 1/2 lemons, juiced Salt and fresh cracked pepper Slap Yo Momma or any Cajun seasoning mix Pinch of zero calorie sweetener

Preparation: 1. Heat 2 tablespoons of olive oil in a skillet.

2. Lightly sprinkle Cajun seasoning over shrimp and cook 2 minutes on each side. Be careful not to overcook.

3. Transfer shrimp to a shallow plate and allow to cool while you prepare the other ingredients. 4. In a small bowl mix lemon juice, 2 tablespoons of olive oil, garlic, and a pinch of sweetener. Whisk until well combined.

5. Combine tomato, red onion, shrimp and cilantro into a large mixing bowl. Add vinaigrette and toss to mix everything together, gently fold in avocado so it doesn't get mashed.

6. Top with a sprinkle of Cajun seasoning and cilantro for garnish and enjoy. *NOTE this taste better after it has sat for 15-20 minutes allowing the flavors to develop. Enjoy! 😋
