I've been craving this salad! It's higher in carbs BUT it is #wholefoods, #natural, and #cleaneating. I struggled with unexplained infertility, so changing my diet and eating clean was the first thing I did on my journey to conceive. This is one of the salads loved during that time. I hope you love it as much as I do!
Ingredients: 2 -3 beets 1 orange whole 2 tbsp of fresh squeezed orange juice 2 tablespoons of walnuts 3 tablespoons of olive oil 2 tbsp of rice wine vinegar 1tsp @Splenda or your favorite sugar substitute pinch of salt and pepper Directions: 1. Wrap each beet individually in foil and place in a baking dish. 2. Bake @ 400 degrees for 45-60 minutes until they are tender. Let cool. 3. In a jar or bowl combine 2 tablespoons of orange juice with 3 tablespoons of olive oil, 2 tbsp of rice wine vinegar and salt and pepper. Shake or whisk well to combine. 4. Toast walnuts in a small skillet for 3-5 minutes, until they begin to brown. 4. Peel cooled beets and slice or spiralize them. Arrange them on a plate or serving dish. 5. Segment an orange and arrange on top of the beets. 6. Sprinkle goat cheese and walnuts on top and drizzle with orange vinaigrette.
