I LOVE LOVE LOVE mashed potatoes! But now that I follow a low carb/keto diet I don't eat them very much anymore. I started whipping this delicious recipe up because I missed having them so much, especially drowning in a yummy brown gravy! ๐ This recipe is quick, easy, low carb, vegetarian, and HEALTHY - 1 NET CARB

Cauliflower mashed "potatoes" is a quick and easy side dish that complements almost any meal. I always have a few @walmart Great Value bags in my freezer for a quick side dish for any weeknight meal. Check out my recipe for this delicious quick and easy cauliflower mash and I hope you enjoy it as much as I do!
Ingredients:
1 bag of frozen cauliflower
2 1/2 tablespoons of cream cheese
2 1/2 tablespoons of heavy whipping cream or half & half
salt and pepper to taste
butter to taste
Preparation:
1. Microwave bag of cauliflower on high for 3-5 minutes. 2. Carefully drain the cauliflower in a colander and gently press to remove any excess water. 3. Place cauliflower, cream cheese, and heavy cream to a food processor or blender and blend on high until smooth. 4. Add salt, pepper, and butter to taste blend one last time and Enjoy!๐
