Whether you load them up, eat them plain or top them off with gravy, I promise you will love this low carb potato alternative! Recipe: ▪️2 12oz bags of frozen cauliflower ▪️2-3oz. cream cheese ▪️3 tbsp heavy cream ▪️salt to taste
Preparation: 1. Microwave/steam cauliflower until soft. 2. Add cauliflower, cream cheese and heavy cream to a blender or food processor and purée for 3-5 minutes until smooth. ❗️IMPORTANT: Make sure to open vent hole when blending hot food to avoid burns from splatter or pressure build up. - 3. Add purée to a pot and cook on medium heat until most of the moisture has evaporated and begins to have a mashed potato consistency; making sure to stir frequently to avoid sticking / burning.
4. Season with salt to taste. Serve hot and enjoy 😋
