You can make so many yummy desserts with lemon curd, spread on toast, cakes OR just grab a spoon and eat it straight up... Like me! šā£ ā£
Ingredients:ā£ 4 large egg yolksā£ 1/2 cup @Splendaā£ 1tsp cup finely grated, loosely packed lemon zestā£ 1/3 cup freshly squeezed lemon juice (2-3 lemons)ā£ 1/8 teaspoon fine saltā£ 6 tablespoons unsalted butter cut into small pieces, at room temperatureā£ ā£ Directions:ā£ 1. Fill a medium saucepan with 1 to 2 inches of water and bring it to a simmer over high heat; then reduce heat to low.ā£ ā£ 2. Place all of the ingredients except the butter in a large mixing bowl and whisk to combine. Set the bowl over the simmering water and whisk constantly until the yolks thicken, forming ribbons when the whisk is lifted about 7 to 10 minutes. (Check to make sure the water does not boil or touch the bowl, so the eggs do not "cook/scramble")ā£ ā£ 3. Remove the bowl from heat and whisk in the butter one piece at a time, waiting until each piece is completely melted and incorporated before adding another.ā£ ā£ 4. Set a fine-mesh strainer over a medium bowl. Strain the curd, stirring to push curd through and scraping the curd clinging to the bottom of the of the strainer into the bowl; discard the solids left in the strainer. ā£ ā£ 5. place curd in an airtight 8 oz container. Refrigerate until set and chilled, at least 3 hours. The curd can be refrigerated up to 5 days ahead.
