Fried Eggplant Sticks

We eat a lot of eggplant because of its versatility and neutral flavor. For a #MeatlessMonday meal option try these yummy gluten-free and low carbs sticks. They are easy to make and you'll find it hard to just eat a few. 😋 Make as an appetizer or a meal, either way, I'm sure you will enjoy this one!⁠


To lighten these up I cooked them in the air fryer. They can be pan-fried, deep-fried, or even baked if that's your preference. Dip them in your favorite homemade or jarred sauce. I used @raoshomemade.⁠

Don't forget to follow me for more yummy recipes like this and TAG ME if you make it. ⁠ Ingredients: 1-2 eggplants, peeled and sliced into 1-inch sticks

2 eggs

hot sauce

2 cups grated parmesan cheese, the kind in the bottle works best

2 tbsp Italian seasoning

1 cup crushed pork rinds (optional for added crunch)

Salt to taste

Pepper to taste

2 tbsp cornstarch or arrowroot powder

1 tbsp chopped parsley for garnish

1 cup of your favorite marinara sauce for dipping


Preparation:

  1. Slice off both ends and peel the eggplant. Slice into 1-inch planks then cut each plank again into 1-inch sticks.

  2. Lay eggplant sticks in a single layer and sprinkle with salt and pepper and cornstarch. I find using a mesh sieve or strainer works best for a light even distribution. Turn sticks and coat each side and set aside.

  3. In a shallow bowl beat egg with a few dashes of hot sauce and set aside.

  4. In another shallow bowl combine the parmesan cheese, Italian seasoning, and crushed pork rinds.

  5. Now using a wet hand and a dry hand dip the sticks in the egg mixture and place them in the crumb mixture to coat. Using your dry hand or spoon sprinkle mixture all over to even coat the sticks and lay flat in a single layer and allow the coating to set. Repeat until all sticks are coated.

  6. Now air fry (deep fry, bake, or shallow fry) eggplant sticks at 350 degrees (medium heat) or until browned and crisp.

  7. Arrange on a platter and sprinkle with parmesan cheese and parsley to garnish.

  8. Serve with warm marinara sauce of your choice and Enjoy!
