This soup started out with me trying to recreate Outbacks Walk About Soup. From there it began to be a combination of my favorite flavors mixed with a little of this and a dash of that! This soup is rich and full of flavor, a little will go a long way!
Ingredients: 6 medium yellow onions, sliced 3 tbsp olive oil 3 cloves of garlic, minced 1 tsp of salt 1/4 tsp fresh cracked pepper 2/3 cup heavy cream 1 cup of shredded Colby Jack cheese 2 cups of beef bone broth or stock 1/2 tsp of dried thyme Directions: 1. In a medium saucepan heat olive oil and add the sliced onions. 2. Saute' the onions, salt, pepper, and thyme on medium heat until they brown/caramelize. Be sure to stir constantly so that the onions don't burn. When the onions begin to brown stir in the garlic. It may take about 10 minutes. Once they start to brown the process will begin to happen quickly. 3. Reserve about 1/4-1/2 cup of onions to garnish the soup. 4. Add the bone broth/stock and cheese and simmer until warm and cheese has melted. 5. Blend soup in a blender or in the pot using an immersion blender until smooth and completely pureed and return to pot and heat through. 6. Stir in heavy cream and season to taste with more salt and pepper if needed.
