In my house a Caprese salad is a HUGE favorite! Putting it on a grill chicken breast was bound to happen, i'm just surprised it didn't happen sooner š. This is a delicious combo, try and let me know what you think.

Ingredients:⣠Boneless skinless chicken breast⣠Fresh Mozzarella cheese⣠6 Fresh basil Leaves⣠Balsamic vinegar⣠Cajun seasoning like @Slapyamomma⣠2 Tbsp olive oil⣠12 grape tomatoes⣠⣠Preparation:⣠1. Season chicken with Cajun seasoning or salt and pepper. Grill for 4-5 minutes on each side.⣠⣠2. Place chicken on a plate and top with 2 slices of fresh mozzarella cheese on top of chicken allow it to melt. Note: if cheese doesn't melt much you can microwave for 30-second intervals until it has lost its shape and falling around the sides of the chicken.⣠⣠3. In a heat-safe mug (to prevent splatter) add 1-2 Tbsp of balsamic vinegar and microwave for about 3 minutes at 1-minute intervals or until reduced by half or more. ⣠⣠4. In a small skillet heat oil and add tomatoes. Let tomatoes char, rotating them to brown on 2-3 sides. Turn off heat and gently crush a few to release some juices.⣠⣠4. Stack and roll basil leaves and slice small strips and add to tomatoes and cook for 30 seconds. ⣠⣠5. Spoon tomatoes on top of the chicken breast and drizzle with the balsamic reduction and garnish with a few whole basil leaves.
