Avocado Toast 🥑🍞- This morning I was craving something light and fresh instead of heavy/greasy bacon and eggs. I used my favorite low carb bread recipe. To get my fats in added cream cheese and a drizzle of olive oil. A few 🍅’s and breakfast is served ENJOY!😋

My little Sous Chef Helping Mommy! 👩‍👧Avocado Toast Recipe🥑🍞 with Tomato Salad 🍅⠀

For the toast:⠀ 1/2 cup almond flour⠀ 1/4 cup whey protein unflavored⠀ 1/2 tsp zero calorie sweetener⠀ Pinch of salt⠀ 2 tsp baking powder⠀ 1/4 Xanthan gum⠀ 1/2 cup water⠀ 1/2 Avocado⠀ Cream cheese⠀ For the tomatoes:⠀ 6-7 cherry tomatoes⠀ Rice wine vinegar⠀ Olive oil⠀ Salt and pepper to taste ⠀ Directions:⠀ 1. Slice tomatoes in thirds and place in a small bowl. ⠀ 2. Add a drizzle of olive oil, sprinkle of salt and pepper and 1-2 tablespoons of rice wine vinegar. It’s and set aside to marinate. ⠀ 3. In another bowl mix all of the dry ingredients until well blended. Add water and mix until it resembles thick pancake batter. ⠀ 4. Grease a 3-4 inch round or square bowl or Tupperware container (for toast or English muffin shape). ⠀ 5. Pour batter in container and spread into an even layer. ⠀ 6. Microwave for 2-3 minutes. Start with 2 and check to see if an additional minute is needed. ⠀ 7. Let cool and slice into two pieces. ⠀ 8. Spread with cream cheese and top with avocado. ⠀ 9. Serve with tomatoes on the side. ⠀ 10. Pour juice from tomatoes on avocados and sprinkle with salt and pepper.
