Avocado Toast š„š- This morning I was craving something light and fresh instead of heavy/greasy bacon and eggs. I used my favorite low carb bread recipe. To get my fats in added cream cheese and a drizzle of olive oil. A few š ās and breakfast is served ENJOY!š

My little Sous Chef Helping Mommy! š©āš§Avocado Toast Recipeš„š with Tomato Salad š ā ā

For the toast:ā 1/2 cup almond flourā 1/4 cup whey protein unflavoredā 1/2 tsp zero calorie sweetenerā Pinch of saltā 2 tsp baking powderā 1/4 Xanthan gumā 1/2 cup waterā 1/2 Avocadoā Cream cheeseā ā For the tomatoes:ā 6-7 cherry tomatoesā Rice wine vinegarā Olive oilā Salt and pepper to taste ā ā Directions:ā ā 1. Slice tomatoes in thirds and place in a small bowl. ā 2. Add a drizzle of olive oil, sprinkle of salt and pepper and 1-2 tablespoons of rice wine vinegar. Itās and set aside to marinate. ā 3. In another bowl mix all of the dry ingredients until well blended. Add water and mix until it resembles thick pancake batter. ā 4. Grease a 3-4 inch round or square bowl or Tupperware container (for toast or English muffin shape). ā 5. Pour batter in container and spread into an even layer. ā 6. Microwave for 2-3 minutes. Start with 2 and check to see if an additional minute is needed. ā 7. Let cool and slice into two pieces. ā 8. Spread with cream cheese and top with avocado. ā 9. Serve with tomatoes on the side. ā 10. Pour juice from tomatoes on avocados and sprinkle with salt and pepper.
